As a vegan I’m always on the lookout for baking recipes that don’t require eggs as this is one of the hardest ingredients to replace in a vegan diet. A few weeks ago Lucy over at Attic24 posted a recipe for chocolate chip cookies that promised yummy chocolatey goodness without breaking any eggs. I just had to have a go!
I followed the recipe pretty much as given except for adding a teensy bit more flour. My mixture seemed too sloppy with only 175g of flour. I kept adding little extra teaspoonfuls until the mixture was just right. All told it probably worked out to be an extra 50g of flour.
I couldn’t resist picking up the latest Country Living magazine too.
